hello everyone

i got some new toys to replace some of the old ones i went to cabelas and went crazy i bought a 1 1/2 hp grinder and cuber attachment and meat mixer attachment the rest of the stuff is old stuff that i have had for a while

25 pound scale
meat slicer
11 pound weston sausage stuffer modified so it will do the job
small blender chopper

nice stuffer, i have an old enterprise but hated the two person operation it needed, one cranking and other manning the casing. so i got identical stuffer like yours but with electric motor with a foot pedal. last year i broke it in and man was that sweet. i mixed approx 7-8 different batches of sausage incl some summer and some snack stix and stuffed em all myself. went in house woke up wifey and asked if she was gonna help or what.she came out to garage and asked where she should start, i said mebe wash some of the stuff up and she about flipped when i showed her it was all done and she didnt have to help. LOL nice set of equipment you have there!!!

so far i have only used the cuber and it worked great i will be grinding up some elk meat today i am sure i will like the grinder it is made by traspade if you go to www.alliedkencosales.com they have a cuber attatchment that is made by pioneer it fits a lot of different grinders that might be worth a shot

this is the first mixer i have had i am excited to use it wasent sure how it was gonna work now with you encouriging me i am even more excited lol

the stuffer was a pain until i replaced the oring on the plunger now it works great at first i was real disapointed in it its better now maybe my next purchase will be the motor attatchment was thinking of going bigger but since its working now i may keep her and just buy the motor

Mix the seasonings in BEFORE grinding - cut meat into 1inch ish cubes (don't take long) mix in seasonings THEN grind. Much easier and gives you considerably better seasoning distribution and is much much easier than trying to mix seasoning into ground meat (why would you ??)
Big bowl and a wooden spoon is all that's needed.

lol yeah that's some serious looking sausage making gear you've got there.

I know this is probably a daft question - but is a meat cuber just something that cuts meat into cubes or what ?

yes it makes cube steak it is two rollers with a bunch of blades on it the meat rolls threw and is tenderized i really like it sometimes the elk i get are pretty tough to eat this will help a lot

I have the same grinder and stuffer as you. I did get the motor separately and it really makes it into a comfortable 1 man operation.

If you are going to purchase the motor for it I would recommend phoning Weston (They manufacture the Cabelas stuffers). They sell reconditioned motors complete with foot control for about half the price as Cabelas. They have full warranty on them as well. They used to advertise them on their web site but for some reason they don't anymore but if you give them a call you can usually get one. Here is their site with contact info.

mike thanks for the info i will have to wait a while before i purchase any more the wife would kill me if i ordered one right now lol
