sausage formula looks outa whack

Hey Fellas

I'm almost sure this formula is wrong. I renamed it should the person come along and see this. But, for 5 pounds of ground beef, this seems like way too much herbs and spices. If she really makes this like it is written, I don't think anyone would taste the beef. Here it is:

Linda’s All Beef Spice Cabinet Sausage

Per 5# Ground Beef
10g Thyme
10g Coriander
10g Marjoram
3g Sage
10.3g B. Pepper
20g Pepper Flakes
10.3g Mace / Nutmeg
10g Summer Savory
40g Salt


The usual 1 to 1.5 cups water; mix; stuff.

What think ye??
 
The amounts called for of herbs and spices are HALF the consumer sizes (4" tall) .75 oz Herb Bottles and HALF the small (1.5") .9oz Spice bottle!!!
Move the Herb and Spice weight Decimal Places once to the Left and those amounts I can see. 40g of Salt seems fine, about 1.7% ...JJ
 
These values are per Kg... ~2.2#'s....
