I have a friend who makes sausage balls by mixing biscuit mix with sausage. The result is very good but quite greasy and mostly just a sausage flavour. I knew I could do better and came up with my own recipe. I was making some chicken thighs for company which I do at a higher heat in my pellet smoker to get a good skin. Why not do the sausage balls at the same time. This was my first attempt at sausage balls on my smoker. I used my OFG Breakfast Sausage but you can use your favourite breakfast sausage.

I started by mixing the dry ingredients together in a bowl:

· 170 ml (3/4 cup) of flour
· 1 ml (1/4 tsp) of salt
· 1/2 ml (1/8 tsp) of pepper
· 1 pinch of cayenne
· 4 ml (3/4 tsp) of baking powder

I put 25 ml (2 tbsp) of butter into the dry ingredients and cut it in with pastry blender until it is like coarse cornmeal.

I made a well in the centre of the mixture and added 50 ml (1/4 cup) of milk with 5 ml (1 tsp) of lemon juice added and stirred until a ball started to form.

I added:

· 100 grams (3.5 ounces) of grated cheddar cheese
· 300 grams (10.5 ounces) of sausage meat
· 75 ml (1/3 cup) of finely chopped onion

I mixed it by folding the mass over and pressing down. Then turned the bowl 1/4 turn and folded and pressed. I did this for about 10 times until it is well mixed.

I rolled pieces of the mixture into walnut size balls and put them in a roasting pan.

I had my smoker at 400 F and put the balls in.

I cooked for 22 minutes.

The Verdict

These turned out great! They have a great sausage taste with a cheesy addition. They are not greasy and disappeared quickly after putting them out. Trust me, these are a great appetizer.

Thanks, Adam! I don't think you will be disappointed. I have also increased the cayenne to 1 ml (1/4 tsp) if you like something with a bit of bite!

Those look lovely. My mom used to make sausage balls with pork sausage and cheddar, using Bisquick. They were never greasy. Maybe, you just need to drain the sausage after cooking it...lol. I do know that after seeing this post, I'm going to have to make some soon!
 
looks great but i'm not clear on one thing , did you prefry the sausage before adding them to the mix ?
 
Oh man Disco I just saw this...looks like those cheddar garlic biscuits from Red Lobster mixed with sausage! Yum! LIKE!

No, you put the sausage in uncooked. The internal temperature of the rolls gets to around 200 F when they are done and they are perfectly safe.
