Well one of our service guys we work with has donated to the cause.  


  They went to Costco and bought a AAA whole boneless Rib to feed the lot of us.  So fired up the Pit Boss, set it to smoke. Gave this beauty slab of meat some salt and pepper rub and put it on @ 7:00 am hoping  to be ready for supper time / crew change. Smoked until 4:30 to an IT of 148. Pulled and let rest for an hour. 


  Sliced up  and trayed to serve us a nice treat. 

 
Sorry no pics of the rest just the meat money shots.......  It was a great dinner though..
 
It sure looks juicy!

A little too done for me, but I bet it was tasty!

Everybody likes theirs different, but I'd fight anybody who tried to remove one of those slices from my plate!!!!

Hey Gary, Sorry about late response, I did go home for 11 days for Christmas break, Back at it now though. It sounds like we will be finishing up soon due to bad markets, pricing and no ability to get product to market. Almost everyone I talk to is slowing down or shutting down early this yr. Who knows. Maybe I will get some time to go home and get some things done and do some smoking.....
