Ft Lauderdale.
Second cook with my Oklahoma Joe reverse slow . Still have some kinks to work out. Tried lump charcoal for a bed by suggestion of other member here. Royal Oak will not be my choice next time. Too manygolf ball size chunks not allowing basket to breathe and get a good amber bed without a lot of prodding.
it was my first cook with my new InkBird BBQ4. I really like the thermometer but the app needs a few revisions to make it more user-friendly. I can do a whole post on that too lazy this morning. It’s really tough to find a nice clean cut of St. Louis ribs in South Florida. Real butchers are few and far between down here.

I live in FL too, and have found that Publix has some pretty good STL’s.
I have to admit that I buy the frozen one’s when they put them on sale, but the fresh are better. I have usually had a few beers before the ribs are done, so I can’t tell the fresh from frozen. They used to be on sale for $1.99, but they were $2.99 a couple of weeks ago & now they were on sale for $3.99.
Maybe Labor Day they will come down a bit. I sure hope so!

Those really look good from here! Those do look more like spares that were barely trimmed up. Betcha they tasted good anyway.

that's where those are from. my wife is trained enough to look for STL. i bought two and saved one for later. It's my go-to cut. We have a place down here called Doris Italian market. the have babby's from time to time, and it sounds weird, but they are almost too meaty.

I used to always buy BB’s, but as you say they are now cutting them with a thick piece of the loin on top. Thee loin meat starts to dry out above 145, but the rest of the rib needs to go to 195-205, depending on how tender you like your ribs. So I only buy STL’s now too. The reason they leave the loin meat on top is because it’s a much cheaper cut than BB’s, so they sell you loin meat for double the price they can get for a loin.

Those look really good.

Any of y'all buy spare ribs and trim down to St. Louis cut yourselves? Was flying with a guy last week who does that. Uses the trimmings for beans or chili, and of course, saves a few bucks by trimming himself.
