Today I tried a rolled pork loin roast and it now near the top of my choices for my MES!


I started off with a 6lb center cut loin and roll cut it.

Then I seasoned it with garlic sea salt, pepper, oregano, marjoram basil and minced garlic.

Followed by canadian bacon

Next I added a layer of shredded Italian Cheese mix (mozzarella, romano, asiago and parmesan)

Tied it up and put in the smoker using apple chunks at 215 to an IT 155 (took about 2 hours)

Removed from smoker, wrapped in foil and let rest for 15 minutes

That looks wonderful nice and juicy. I usually pull around 140 and let the carryover bring up to 145.

Thanks everyone . @gmc next time I will pull it at 140-145. This was my 1st attempt and I was just going off a recommendation that came with my meat thermometer. Midnight snack proved very slightly dry.
