OK, I'm in. But one question, what's in "Little of that, little of this"...🤣

Looks great Rick, I know it will be the good stuff. Sausage on.

No emulsify?

Like Willy Wonka
I cant tell all my sausage making secrets.
It's online IF you know how to search for it. LOL Have not made it yet but like your slim jim formula. Working on a Tabasco version.

Looks like not today, just started to rain....umm i mean pour.

I got 1 ring and a half as i suspected.

I crank my mix to the end of the tube, less are pockets that way.

What the difference between ring and regular deli bologna. For those of us who are sausage illiterate.

Chris

Ring bologna is also known as trail bologna and it's origins are here in Ohio. https://troyerstrail.com/ To me, ring bologna is REALLY close in flavor to a good knockwurst but a bit larger in size. That being said, I think there are some variations to the style and Rick is doing a PA Amish take on it here that is more flavorful and spicy. Most folks snack on it with crackers and cheese but I am known to use it like knockers and bake with in kraut.

Thanks Sam, I like knockwurst and kraut. Never had them baked. My mother and grandmother use to cook them on the stove in a pot together using the kraut juice for liquid.

Chris

Ring is a smoked meat, small diameter to eat with crackers, cooking or slice for pickling. I'm making PA Dutch style ring, Ohio is prob pretty close.
