Ribs in the Oven

I know it's sacrilege to talk of such things on this forum, but out here in Wyoming (I moved here from Ohio in June), it's waaaay too windy to get grilling much in the winter.

I'm hoping you folks have a suggestion or two about cooking ribs in the oven. Obviously, you can't smoke them in the oven (or can you?), but it seems simple enough. Any tips or tricks to such an endeavor?

I've been to Wyoming fishing for kokes at Flaming Gorge in May, June, and July, it's always windy after ten in the morning, just a lot colder this time of year. Try 250º in the oven until probe tender, maybe 4-6 hours, a oven's just like a smoker with no smoke. RAY

I'm over on the East side, Douglas. I'm really looking forward to hitting up the Miracle Mile in the spring for some trouting! Went once already to Gray Reef area, but it was so cold my hands were not happy - and I spent the first 2hrs trying to untangle my flies and then saying screw it and cutting it off and re-tying. lol

I want to hit up Flaming Gorge sometime for smallies as apparently that's the place to do it.

Flaming Gorge is known for the best kokanee fishing on the planet, and the lake trout action is really good also, of course having a boat is kind of critical. You are in elk, deer, and antelope heaven, good luck! RAY

I did these on the roto of a 360 air fryer . They were great . Like pork roast on a stick .
Not everything has to be smoked .

Alton Brown has a good in the oven recipe for babybacks but it works for all ribs.I remember it from the early days of The Food Network.


You can play around with the spices to suit your taste.I remember adding some smoked paprika and few other things.It was so long ago I really can't remember!

I still use that recipe for ribs often, I just haven't done them in the oven in maybe 15 years.
But yeah the oven works fine.

I cooked spare ribs a lot in the oven before I started smoking. I used a sheet pan (aka cookie sheet with 1" sides), oiled both sides of a cooling rack, placed the rack in the sheet pan, placed the seasoned rack of ribs on the cooling rack, then cooked them usually at 275F (3-6 hours, depending on rib rack size), 325F (3-4 hours) if I was in a hurry. Back then, I cooked them until they were FOTB. Now I'd probe for tenderness before they reached that stage.

No issue with ribs in the oven. They are quite simple since ribs don't really care what temp they are cooked at.

Season with Salt, Pepper, Garlic, Onion, and Paprika (no sugar so it doesn't burn and get bitter!!!)
If you have a roasting rack then put the ribs on a roasting rack bone side down.
Set the rack in a roasting pan or a cookie sheet that has at least like 1/2+ walls all around to catch the fat.

If you don't have a roasting rack then foil up that same roasting pan/cookie sheet with the 1/2+ walls and lightly oil it up so the ribs dont stick to it. Ribs bone side down.

Cook uncovered at 325F oven temp until ribs reach desired tenderness.
You don't have to but If you want u can brush on BBQ sauce like 20-30 min before it is done (this adds your sugar if u want).

That's all there is to ribs in the oven, super simple. People do a lot of unnecessary stuff to cook ribs in the oven and the ribs come out great IN SPITE of all the extra efforts these people take hahaha.

Hey Jeep buddy,

I do them in the oven following the below, I did find 3 hours sometimes is too long and also have sauced them at the end under the broiler when I did not want to use the grill. I also love the chipotle bbq sauce recipe as well.

I just Oven Roasted 2 St Louis Racks, last week...
I rubbed them well with SPOG, and let them rest while the Oven Pre-heated. I placed the Ribs Meat Down in a Half Sheet Pan and roasted them at 350°F for 1 hour. I then turned them Meat Up, and roasted another Hour.
Mean while, I took 1C Of Sweet Baby Ray's sauce and stirred in 2Tbs Molasses and 2 tsp Colgin's Liquid Hickory Smoke. When the ribs passed the Bend Test, lifting a Rack from one end and then Bend 90° and the meat started to separate, I turned on the Boiler. the Ribs were 6" Below. I turned the Ribs Meat Down and brushed with 1/3 of the Sauce Blend. When the meat got to the desired caramelized color, about 7 minutes, I flipped them Meat Up, brushed with half the remaining sauce blend and Broiled until Dark Brown. I added the Last coat of sauce, let the ribs get nicely caramelized and pulled the ribs out to rest, Uncovered, on the counter for15 minutes. I then portioned and served.
The Ribs were Dark, Sticky, Juicy and SMOKEY! No additional Sauce was needed. I tried adding some SBR's, out of the bottle, but liked the ribs without additional sauce MUCH BETTER!

Was it as good as 6 hours of Smoke at 225? Not Really, but those Ribs were Close Enough that I will be eating Ribs prepared this way all Winter!...JJ
 
I recently found Lillie Q bbq sauce. The Hot Moly is absolutely delicious. Might use that as the sauce!
 
Nice! what method are you doing? Heading back to OH for the holidays?
Not anytime soon, unfortunately. With COVID, travel to OH is a bit difficult. Hoping sometime in February now, was wanting to go there in mid-late Jan.
 
Well I managed to snag some ribs myself and did them in the oven because I didn't have the time to fool with the smoker. Super simple. I cooked mine at 350F oven temp, seasoned with Salt, Pepper, Onion, Garlic, and Paprika. Uncovered the entire time in the oven, no wrapping, basting, spritzing, mopping, massaging, or chanting in various tongues to make these great ribs.... soooo simple.
