Well, who knew you didn't need a cold one to Q correctly. Wife was in the mood for some ribs tonight. So rather then try and talk her into a PB&J sandwich. I totally caved, and picked up a nice rack of St. Louis style ribs. Holy cow 17.00 for one rack. I almost pooped myself in the store.

....and away we go!!!

Ribs sprinkled with just kosher salt and pepper. I still had one slice of bologna left over from yesterday. So why not smoke it up. Here it is seasoned with Tony C's.

On to the 26 burning coals and some hickory chunks.

Flip the bologna

and it's finished. The Bologna that is.

The bend test it telling me it's almost time. It's pretty tricky taking an almost selfie while trying not to drop the ribs. The beer pole feels abandoned.

Since these were the wife's request. On goes the sauce. (At least one of use got sauced during this cook. To bad it was the ribs)

And they're done.

Almost forget the bologna. Lunch for Monday. Spinach and smoke Creole bologna. I suppose I can call it Creole since it's seasoned with Tony C's

Thanks for taking a peak

Those ribs look perfect . I really need to do some bologna . Dad used to grill it direct and sauce it on the grill . Man it's good .
I also need to uncover my 26 .
Nice cook , why no beer ?

Ribs look perfect, I'll take 2....:emoji_thumbsup:

Thanks GS, That's about all that's left. I had more then I normally do. Thanks for the like also.

Appreciate it Rich and for the like. The only issue with the ribs was the membrane. I usually leave it on and it's not a problem. This one seemed thicker then most. The bologna was real good. Not much of a smoke flavor, but maybe it was Tony's covering it up. I was going to sauce the bologna up too, but since it will be microwaved tomorrow I decided not to. Glad I didn't. No beer - well the grandson was over at the house this afternoon, and I decided to play it safe. Then when he left I didn't really feel like one.

Thank you very much John, minus the thicker membrane these were outstanding. Also thanks for the like.

Only way to fly in that case . Good lookin out bud .

He's just starting to walk upright and gets into a bunch of stuff quickly. So until he can really understand what I'm saying I don't want to risk him taking a sip or spilling it.

Great looking ribs, and I'm in for some baloney, and some day I want to smoke a log of it .
( sorry I will pass on the spinach ) lol
and just a shadow of the beer pole .... lol

David

Your right David, the beer pole was just a shadow of itself today. Thanks for the kind words and like - even if you don't like spinach. I'm the same way with schrooms - so I fully understand.

like a lot of the veggies I eat I would sooner them raw, spinach with vinegar and oil , sure thing , limp and soggy , not for me . lol

David

I've always eaten certain veggies raw rather then cooked. Broccoli(although now I'll eat it cooked), colliflower, carrots, and turnup to name a few.

Looks awesome Chris!! The price of ribs this year has been insane. I finally scored spares for $1.79 / lbs a Kroger a few weeks back. Bought 7 for the freezer lol.

Beer or no beer that's one fine lookin' rack-o- ribs Chris, Like! Good job on keeping a eye out for the rug rat, plenty of time for a brewster or two while they are on their way back home. Of course when they're spending the night they are grandmas responsibility, I reckon. I've never made a lot of grandad points, kids always got all snotty when I'd plop the little rat on my lap and giving him a sip of Rolling Rock. I'd tell them it ain't my fault is he grows up to be a sissy. Haven't seen any of them in years now. I wonder why? RAY

Sure looks good to me! Pretty soon that grandson be old enough to get ya a beer!
