Well, who knew you didn't need a cold one to Q correctly. Wife was in the mood for some ribs tonight. So rather then try and talk her into a PB&J sandwich. I totally caved, and picked up a nice rack of St. Louis style ribs. Holy cow 17.00 for one rack. I almost pooped myself in the store.
....and away we go!!!
Ribs sprinkled with just kosher salt and pepper. I still had one slice of bologna left over from yesterday. So why not smoke it up. Here it is seasoned with Tony C's.
On to the 26 burning coals and some hickory chunks.
Flip the bologna
and it's finished. The Bologna that is.
The bend test it telling me it's almost time. It's pretty tricky taking an almost selfie while trying not to drop the ribs. The beer pole feels abandoned.
Since these were the wife's request. On goes the sauce. (At least one of use got sauced during this cook. To bad it was the ribs)
And they're done.

Almost forget the bologna. Lunch for Monday. Spinach and smoke Creole bologna. I suppose I can call it Creole since it's seasoned with Tony C's
