This is my third time trying to reverse sear steaks.  I am getting better, but not perfect.  The steaks come from my buddy's farm.  

I started with a chimney full of lump charcoal.  Went 6:30 per side on the indirect side, 10:00 minute rest and then 1:00 per side over direct heat. They tasted pretty good.














 
Those look great!  I don't rest my steaks between the cook and sear.  I cook them till 120 and then sear.  I'm shooting for a final 135 IT med rare.

120 IT? You lite the chimney, have a beer, dump the chimney, and chase the steer over the campfire once and if it don't still moo, you're a pork lover!
