Hey there! I was a member of this forum several years ago, learned enough to get myself started, but then kinda fell off the forum for no particular reason. I have since moved from Texas, where BBQ is a constant, to Michigan, where it's kinda not. But I'm bringin' it on, baby!
My current smoker is an upright propane model that does a descent job, but does require more monitoring than I'd like--particularly on those super long low-and-slow pork butt projects. I can catch a few winks in-between the remote temperature alarm beeps, but it definitely requires me to be taking short cat-naps in the living room for those all night smokes. I've never tried an electric pellet smoker before but I have a Grilla Silverback on order that should arrive any day now. Fun times.
Anyway--this upcoming 3-day weekend has me firing up the current propane smoker for the first time this year, so naturally I'm looking up recipes and re-orienting myself to the process. I'm planning on some 2-2-1 BB ribs and two spatchcok chickens. I don't do chickens often, but the last time I made them I soak them in in half-and-half over night and then smoked them with some sort of rub that I can't remember! Suggestions for a simple chicken rub are more than welcome!!
