Thanksgiving Turkey Pastrami

I was home alone for Thanksgiving, My wife and niece are in the Philippines with the extended family and I am home with the dogs while having some renovation done on the house. It is fine by me. I will still make myself a small Thanksgiving meal for myself with a few treats for the pups.

Only a few days ago I watched a video on making Turkey pastrami and thought that would be something to make but could not find it again. After searching I found many ways to make it but not of them included the Juniper berries that had peaked my interest. I eventually found some but never found the original one.

I pieced them together and made my own that I can say worked out way better than I thought it would turn out. I started with a 7.8Lb boneless Turkey breast that I had thawed. I brined it for 24 hours.

Then I placed on the dry rub and placed it in the smoker at 225F for a couple hours then increased it to 300F until it was done. I mixed Hickory, Red oak and Mesquite to get the best smoke and flavor into it.

Sorry, something was wrong with my phone today, Most of the pictures were very blurry. I only had two I could use. Here is the Turkey breast when completed. It was very juicy and I was surprised how it tasted like pastrami but was Turkey. So worth all the work.

I also made garlic butter mashed potatoes, canned corn and a Hawaiian roll.
