I live in Connecticut.  I have done some Internet searches looking for wood suppliers.  I even looked on Craigslist.  How did everyone find their wood suppliers?

I have been using a Weber with charcoal and wood chips, hickory and some mesquite, but I am shopping for a smoker (leaning towards the Lang 36).

What woods do you like to pair with meats?

On some of the threads I have seen that some people use one wood for the majority of their burn, then switch to another.  I have done this with mesquite.  Does anyone use this technique?  If so, what woods do you use and what meats are you doing with that?

Hickory and oak are my favorite for meats. Apple, maple and cherry for sausages. I stay away from mesquite. Its a little strong for my taste

RE: mesquite, that's why I like to add a little at the end, just for flavor.  I find it gets to be too much quickly.

i've used hickory, oak, maple, cherry, pecan so far. i really like the hickory and pecan. i'm a wood scavenger. i drive through older neighborhoods and look for brush piles, i just got a nice load of red oak a couple weeks ago doing this. i've even cut up fallen trees along the side of the highway that no one would touch, not gonna let'em go to waste.  i also check craigslist often, many people let you take their wood if you're willing to cut up a downed tree for them. if you got a chainsaw, just go for a ride through the country, you'll find limbs on the side of the road.
