What's the benefit of paper and why "stuck" using aluminum. My thought aluminum creates a much better seal, seems superior.
There are benefits to both, the main reason to us paper it will help trap the heat but not the steam. Steam will soften the bark, paper will allow steam to release and preserve heat where as aluminum foil will trap the steam. Just depends on what you are going for.

Ah that makes sense. Guess it depends if you're looking to add moisture or not. Thanks, I'm new to all this
