Got a picnic out of the freezer Thursday to thaw.

    Removed the skin.

    seasoned with this.

    Wrapped and in fridge overnight.

This morning got the mini fired up with some leftover Stubbs then added kbb to it. Used Kiawe wood for smoke.

    Ready for the smoker.

It cooked between 280 and 310 all day. Had the wife watching it while I worked on this.

Nine hours later I pulled it to rest. It was around 190.

    Here's what's left after 9 hours.

    Rested for 2 hours.

Nice clean bone for the pup.

    Some sauce for on top.

    My sammies.

    My wife's supper.

Taking it apart..... No problem. Will you have extra parts when you finish putting it back together? Bonus points: What do you do with the left-over parts?

    Nice looking supper! Her's also!

Foam, you're a nut! That happens to me at work nearly every day. I take a dash apart, note where everything went, fix the issue, replace everything and then look in my bowl and find at least one or two screws that were not there when I started.

Takes special skill to make it work without all bolts.

I have a huge bolt n nut drawer in my toolbox a work.

The two most smoked things here with Kiawe are huli huli chicken and kalua pig! Kalua pig is pulled pork cooked in an imu.

I pass this bellman's cart full of kiawe on my way to work everyday!

Nice smoke Adam. Looks delicious!. 9 hours? Did the missus have to reload the basket a time or two?

Also... That Gen Set looks like it's been around a bit.  ( Second glance.. Maybe its a pump?) ...Almost as old as Foam.  And it's a good thing to have leftover parts!

Thanks, she didn't have to reload. Went 9 hours on one basket full.

    That's actually a JD 4020 tractor. Early 70's I think.
