I was in the mood for something different for left over pulled pork. This was one of the ideas I had. Inspired by a late night munchie classic.

The pulled pork crunchy quesadilla.

The slaw is a spicy mustard based, and is the same version I use on my pulled pork sandwiches.

store brand nacho chips topped with more shredded Colby jack cheese

I need to use a bit more cheese next time. I was not sure how the slaw would hold up in this, but it was something I enjoyed, and will make again, and this time with more cheese.

I like it! Look great. Pulled pork is super versatile. We use for all kinds of stuff, but tacos are a fav.

Not to intercept this question, I use home made taco seasoning on PP for tacos and stuff like this.

Not this time around, I wanted to try and keep that Carolina style pull pork sandwich taste, but served up a bit differently, If I was going to go the the south west tex/mex style I would leave off the slaw, and season the pulled pork with some chili powder a squirt of Lime juice and then top with a jalapeno salsa.

which is also a great way to make these

It turned out so good I made two of them same night, and then again the next day made another one.
