Second attempt for smoked sunny side up eggs. I will be turning it into a delicious sandwich so there are some other ingredients that joined my egg friends





Separate yolk from eggs place eggs in muffin pan. I lucked out and found these shallow pastry shells at work. Make sure you spray them down good

Bacon and sausage drippings for grease to toast bread.
 

Thick sliced sourdough bread


Just the whites in the smoker


Added yolks after about 40 minutes of smoking. Used a spoon to create dip in middle of whites to lay yolks


to the meat I added cheddar to two, provolone to two, provolone and cheddar to two. I also a covered the ham and bacon in maple syrup before smoking.
 

Sausage bacon grease toasted


Suited up with some cream cheese 


Meat and cheese out of smoke about 1 hour


Finished eggs



And now the moment of truth....will the yolks be runny...
 
That is OUTRAGEOUS....Is there a name for that work of art. How long dose it take to make one sammie. When I look at the finished picture, i think i could see it being served at Spago by Wolfgang Puck

The egginator, thanks I take pride in my egg sandwiches and being able to incorporate smoke and still maintain a classic egg sandwich was great. No not to long at all just a little prep and waiting and watching those eggs. Baby them is my best advice. I checked them quite often to make sure my yolk didn't overcook after I added them.
 
I wonder if at a higher temp you could get the eggs to cook better? I do a baked red flannel hash in my cast iron skillet that I top with eggs and bake that come out nice and runny. The oven temp is 450. I can safely get my GOSM up to 425, I may have to give it a try and see. For smoke I could run the AMNTS in the mail box.

I think if he used a small pot lid to cover the eggs for a lttle bit,it would be cook it a little bit more, but yet runny
