PRIME Tri tip, reverse sear

Here is what I started with.

We liked the marinade we put on the skirt steak we had last week, so I just made the same for the TT. I just eyeballed the ingredients, no measuring.

Into the vacuum canister for an overnight nap in the fridge.

I also put a little water in the drip pan.

When the TT hit 115 IT, we fired up the gasser. Cooked some potato’s on the side burner.

It’s nice & hot for the sear.

Judy took the leftover marinade & boiled it down for some Au Jus.

Love these sear grates, they came with the RT, but they seem more suited for the gasser.

I know a lot of folks love WFF for the selection and cheap(er) pricing but it is important (to me) to know more about
the supplier. The owner of WFF is JBS of Brazil.
I am not saying one way or the other whether or not to be a customer but knowledge is power.
Rather than putting a link up I ask everyone to do a little research on their own about JBS and JBS USA.
Our food supply is under great pressure from outside the US and I do not understand why we as a nation let foreign
countries buy our suppliers. For instance Smithfield is owned by WH Group which is a publicly traded Chinese multinational meat and food processing company headquartered in Hong Kong.

The TT looks awesome Al and sorry if I am hijacking your thread but our meat supply is something we should all
be concerned about.

Ohh my that looks fantastic. I love Tri-Tips. The are a bit of a staple at our house. How ever I do miss the days I was introducing people to Tri-Tips and they were like 1.99 a lb not 8.49-10.99 a lb.

I have never seen those days of $1.99 but then again, TT is rarely ever here in lower NY. I can get them at restaurant depot sometimes but need to buy 7 at a time and it will probably be $7.99/lb

Up until about 10 years ago here in Utah very few people had heard of them and the only place I could consistently
find them was at Costco.
 
Well thought out and executed Al. Now I'm hungry all over again. That is a perfect reverse seared TT. POINTS!!!!!
