Shout out to @Bearcarver, his method for prime rib is spot on. This weekend was my parents’ 49th wedding anniversary, and with the storm in the gulf there was to be no bowhunting. I had a 3 bone prime rib that I bought last December, so we decided to smoke one Sunday.

Used pecan wood, smoked at 225-230 until my internal temp hit 125, then I pulled and rested for 30 minutes before slicing. Came out better than perfect, couldn’t be happier!!

Made a foil boat so I could save all the good drippings!

Here she is. I seasoned with salt, pepper, garlic and basted with butter, garlic, parsley, liquid smoke and kitchen bouquet. I used a few sprigs of rosemary as a basting brush and it really turned out nicely.

Took about 3.5 hours to hit 120. 8A045CEF-13CF-467C-8109-E74FFE610E89.jpeg

Damn nice job. Congratulations to the folks. No cold smoke this time?

That looks just right. Years ago a guy much wiser than I told me "you don't cook a prime rib, you just warm it up".

Thanks everybody. I just realized how poor my plated pic was. What a shame. We had fresh turnip greens, and my mom made her famous rice with pine nuts. A fantastic pairing.

@indaswamp, I think I got that idea from an episode of Man Fire Food, I cant take credit for it. But the aroma coming out of my smoker was absolutely killer, and I was happy with the bark on this roast. Will definitely add that to my repertoire.

Very nice!! Im drooling over here!!! 49 years!!! Awesome..not a lot of those any more....big like for that!

Nice work bud .

Thanks Sow, it was delish! You’re right, I’m glad to see them together and happy, it ain’t easy that’s for sure!

Your pictures are causing some serious growling noises. Congratulations to your parents!

Nice ...
That is my liking. Wife prefers the moo is almost gone.
You had me captive until the liquid smoke and kitchen bouquet.
I hope that was for the gravy from the drippings

Just an old family basting recipe. What can I say, I like it. Sort of like A1, I love the stuff. I honestly doubt you taste either, but the kitchen bouquet certainly did give the crust a nice color!

VERY NICE! And congrats to the parents!

PS....you have a smoking addiction.....you know the saying.....If one smoker is good then 3 or 4 more is better!
