, his method for prime rib is spot on. This weekend was my parents’ 49th wedding anniversary, and with the storm in the gulf there was to be no bowhunting. I had a 3 bone prime rib that I bought last December, so we decided to smoke one Sunday.
Used pecan wood, smoked at 225-230 until my internal temp hit 125, then I pulled and rested for 30 minutes before slicing. Came out better than perfect, couldn’t be happier!!
Made a foil boat so I could save all the good drippings!
Here she is. I seasoned with salt, pepper, garlic and basted with butter, garlic, parsley, liquid smoke and kitchen bouquet. I used a few sprigs of rosemary as a basting brush and it really turned out nicely.
Took about 3.5 hours to hit 120.
