overnight brisket​

Saturday, May 21st 2022 - 13 hours, 25 minutes
Auto-created session


After trim, rubbed, Vac Packed, frig for 12 hours, on the T for a good night run.

Ran the night with a 200° average, I had a lot of temp rollercoaster going on... no problem

6:22AM​

Bark looks awesome... meat probes in the 160s... I bumped heat up about 150 and gonna have some coffee before attempting a wrap

Meat came to temp fast, no problem tho... Shut the pit down and wait for Temps to go down a bit

Temps peaked once grill turned off... I'll wait till the 190s and put in cooler with towel wrap

And the sweetness is being gobbled up... I got some cubed ends on now and the rest was unreal

Looks fantastic . When you get 'em right , they're hard to beat .
You got that right, the flat got done too fast but wasn't ruined at all, however it became the best burnt ends ever.

That looks really good. I'll take a plate!

No . Seems the GFS stuff is choice or no roll .
This was a really nice choice I got from them . They've been having the small 8 pounders lately . Those are the best . Really flexible in the bag .
More info later on the no roll . Got to get cutting grass .
