After trim, rubbed, Vac Packed, frig for 12 hours, on the T for a good night run.
Ran the night with a 200° average, I had a lot of temp rollercoaster going on... no problem

Bark looks awesome... meat probes in the 160s... I bumped heat up about 150 and gonna have some coffee before attempting a wrap9:43AM
Meat came to temp fast, no problem tho... Shut the pit down and wait for Temps to go down a bit9:55AM
Temps peaked once grill turned off... I'll wait till the 190s and put in cooler with towel wrap12:45AM
And the sweetness is being gobbled up... I got some cubed ends on now and the rest was unrealThen burnt ends and tater wedgies for lunch also
