I have 3 briskets in the freezer and this one is 16lbs +.
I have a love hate relationship with my GMG. By that I mean I love to hate it!
It never has the correct cooking temps. Always a 20-30 degree delta between the actual rack temp and the cooker panel temp.
So, with a 215 temp request the rack temp was 180ish! Anyway moving on....
So not to dwell with cooking on it, I'm in the process on a Low&Slow overnight cook. More of a hands-off approach.
Very light trim with SuckleBusters 1836 Beef Rub and light dose of SuckleBusters Brisket Rub.
At about 7:00pm last night warmed up the GMG up to 215* and let it roll on till 6:00 this morning.
It was at 150*ish and I bumped it up to 275*. At 9:45am and 160*+ I wrapped it and back on at 280*.
I'll check it around 11:30am and see where it is at.
I will say the bark was well set and very little moisture loss at wrap time.
