sorry or big pic, didn't have time to resize all of them.
As I've mentioned, we don't have butchers down here. You take what's on the shelf cause they don't peak English at the Latin grocery. Was wandering last week and saw "prime" point cuts. not cheap at$7.99/lb but it looked ok.
Decided football and NASCAR would be a good enough reason to "whip up" some burnt ends.

started with this and put together a fresh batch of SPG or season/rub.

WSM ready with Cowboy briquettes and a full pan of water.
it settled in at 247 with TBS (oak, hickory and apple chunks added.
Took it to 175 and a fairly nice bark the wrapped in butcher paper.

Put back in wrapped and let it go up up to197.
Pulled at 205 to cube,
Since I'm not a huge fan of BBq sauce on beef, I whipped up a batch of curing sauce adding beef broth, a TBL of soy sauce and a splash of wash-your-sister to SBR spicy honey.. Simmered until reduced to about 1/2 reduction.
All cubes and sauce added to foil pan. Had vented the WSM to get it up to about 275.
Back in for the gooey part.
Mama did some tater tots and got some sweet slaw. of course the obligatory white bread with butter.
Ate like little piggies. time for Saturday Nascar and Notre Dame Foosball.

Looks great!

Only have an antenna,haven't seen much racing these past few years.Nice to see the Fall race returning to Loudon next year.
