Just got a GMG Jim Bowie yesterday!  Last night we did some chicken wings, shrimp, and some bacon.  Wound up with a flare up, believe from the bacon.  We laid the strips out over a cookie sheet with raised lips, but I guess the grease went over the lips.  What's best method for doing bacon without worrying about the flare ups?  Thanks and happy grilling.

I'm not familiar with that cooker, but it sounds like you had the bacon over a hot-spot, or possibly had the temp set too high. Only 2 things will cause a flare-up with grease in a pan...high temps causing spattering, or spillage.
