Pre-Christmas Prime Rib
I just couldn’t take it any longer, seeing all the great PR post just pushed me over the edge.
 ​
I pulled a nice 3 bone out of the freezer and let it thaw in the fridge. Seasoned that sucker up yesterday to smoke today.

I am not going to go into a lot of detail because I use Bearcarver’s Step by Step

All Thawed, a little scoring and ready for the seasoning


I used Bear's seasoning  Thick Lea & Perrins ,Salt, Pepper

Onion and Garlic Powder


Wrapped up and back in the Fridge till Tomorrow


Waiting on the Smoker to come up to Temp


Holding steady at 225º


About 2 hours in


Dialed her back to 200º


Here is a shot of my fire, I saw where one member was

having trouble getting a low temp. I burned a split at a 

time and used my dampers


Man oh Man Look at all that Goodness 


Believe it or not that wasn't me it was my Wife


And the First Slice  Way to big so my Wife and I

Hah-hah-hah!!! Uh...I mean, um...Ho-Ho-Ho!!! Another smoked PR Die-Hard!!! Lookin' mighty tasty. Gary!!!

That's what our traditional Christmas dinner is based on, as well. I have an 18lbr to share among 11 adults and a handful of youngsters...hmm, little ones aren't real enthused about meats like this. Ah, I just had a thought about adding a second meat in the form of a boneless ham to the charcoal rotisserie, with smoke, of course...should suit the little ones just fine.

Thanks for sharing, and thanks for getting my wheels turning on how grampa is gonna feed the little guys!!!

Thank you Bear,  The recipe (Step by Step) is yours  all I did was follow directions and adapted it to an RF

That looks to be perfectly done!  My wife is on me to make one for NYE, so I guess I too will go with Bear's procedure.

Points for the mouth watering!

Ribs for another day?  no, no, no, I'd be gnawing on them bones!

This is the best that I have right now Gary without going home and taking better pictures.  But I just noticed something.  I said that I usually have the bottom vent on the FB door wide open.  I just realized that when I do that, it closes up the 1" hole on the top of the door.  Maybe if I were to only open the bottom halfway it'd work out better for me.
