Got some before and after shots of my 1st try at pork steaks. I felt like I may have put a little too much smoke on them because I try to keep the flavors from overwhelming my elderly pops. I take care of my folks and their flavor pallate is pretty basic. We ended slicing them on the bias and frying them like bacon and served with fried eggs. WOW was that good! I brined in salt and sugar overnight.

So, trying to figure out where on the pig these are cut from.  Kind of looks like a shoulder bone?  If so, could you get a boston butt and cut it into steaks?
 
yep, cross cuts.....no disrespect intended, they look real good, but in a restaurant I worked in they were always referred to as a 'poor man's pork chop'. I'm thinking if done properly there's a lot of flavor in them though for the price.....Willie
