Pork shoulder in new smoker

Hi folks,

This weekend was my first weekend to use my new electric smoker. I had an 8.39 lb shoulder. I prepped it my rubbing it down with mustard and then applying a great rub. I wrapped it tight in plastic wrap and place in the fridge for 6 hours.

I then fired up the smoker with 1/2 cup apple and 1/2 cup maple. Put the shoulder in at 225 F at 9:50pm. I got up at 1:00am, 4:00am and 7:00am to spray it down with apple juice. Then at 11:00am, I took it off when it had reach 192 F and did something I have never done. As suggested on this forum, I wrapped it in tin foil two times and then in paper towels and placed it in an empty cooler. At 1:30pm, the temp was still at 160 F. I unwrapped it at 4:00pm (now at 150 F), let it cool down, and then pulled it. Made my sauces and served it up. YUM YUM!

All in all, I was very happy with this smoker. This is the first time I used an electric smoker. My other smoker, was a charcoal/propane and it was just too ragged out. My wife bought the electric for Father's Day.
