Hey all,
I have never stuffed a pork chop, I have stuffed many pork loins and pork tenderloins. So I figured I would give it a try, but only one in the event I screwed up, we would still have a meal.
Started with a fresh thick cut chop.
Sauteed some apples in butter, shallot, sage, and a touch of brown sugar
Partially butterflied a pork chop to create a pocket
Kept the apple mixture warm so the chop would cook evenly. I also added in some smoked Gouda
Stuffed it and seasoned with my sweet honey rub and EVOO
I also made a couple other chops that were not stuffed. One with my sweet honey rub and the other with a blend of ginger powder, onion powder, white pepper and salt. I coated both with mayo before adding rub. I find that this really keeps pork moist.
On to the PBC at 235 with Apple wood
Pulled them as they each reached 145 IT
Turned out great, wish I had stuffed all three.
We all loved it, simple side salad and pasta rounded out a great meal.
