HI everyone.
Have 6 Boneless Pork chops frozen.
Also a few jars of Kraut.
Thinking maybe to make half or all 6?
Would like less salt if possible, but know I need liquid to cook it?
Thinking about browning 3 chops season as needed . remove.
Then sauté an onion ,garlic and some carrots until soft. Maybe a few potatoes too ?
Add the chops back and a jar of Kraut.
NOW?: Not sure what to add or not ?
Maybe : A small 8 oz can of tomatoes sauce too?
Lastly what spices to add ?
I got the idea of a stuffed cabbage flavor, but with pork chops ?
Any thoughts please !?
Thanks
ELF

Meal I made a number of years ago.
Rinse the kraut to reduce the salt.
Layer pork and kraut in a crock pot with slices of Granny Smith apples.
I used garlic rosemary seasoning

Layer of kraut and apple slices in the bottom. Dust the pork with garlic rosemary and lay on kraut. Another layer of kraut with apple slices

+1 Rinse kraut/apples/layer. I use apple sauce instead of apples as it easier to keep on hand. For 3 chops I'd add half a chopped onion too. My old neighbor from my childhood was from Germany (Bavaria) and she put a little beef base or bouillon dishes like this. I never make mine the same way and always play around with it. I typically add a few but not all: beef or chicken or veggie bouillon/mustard/sugar/white wine/herbed vinegar/dill pickle brine/bacon grease/beer. Not saying taters and carrot won't work but I don't typically add them, same for tomato. I do the exact same meal with sausage. My fave is a garlic knocker but pretty much any sausage works including kielbasa or big hotdogs. PERFECT meal for a Sunday in Winter is you ask me. Don't crazy long in the oven as those chops are lean.

Spread kraut in bottom of baking dish.

Brown your seasoned chops and place on top of kraut. Cover with stuffing. Prepared stove top work. Bake with thermometer probe in chops until safe temp achieved.

I normally use thick cut chops cured overnight with Morton Tenderquick.

Here's mine.

Your approach sounds solid and should turn out flavorful. To reduce salt, you could rinse the kraut lightly before adding it. A bit of apple juice or broth works well for liquid and balances the tang. For seasoning, consider black pepper, paprika, and a touch of caraway seeds for that classic flavour profile.
