So I'am going to smoke a 5.5 pound pork butt for 5 to 6 hours temps between 250 to 275. Also one slab of Spare ribs. I hope the pork butt doesn't stall. Also smoked baked beans... I will be smoking with Oak & Hickory

My rub
1 cup of brown sugar
1/2 cup of smoked Paprika
1 TBS of black pepper
1 TBS of white pepper
1 TBS Dry Mustard
2 TBS Garlic Powder
2 TBS Onion Powder
1 1/2 Salt
1 TBS Cummin
1 tsp ground cinnamon
1 tsp jalapeno powder

I'll rub both tonight and get the smoker fired up in the morning. will post more pick

Good luck! One thing I always plan on with a pork butt/brisket is the stall. May want to start a little earlier then you are thinking, you can always put it in a cooler for a couple hours and it will stay nice and hot.

I am wondering how you did a 5 1/2 pound pork butt in 6 1/2 hours. I did a 6 pounder (bone-in) yesterday at 275° and it took almost 14 hours. Now I will say, the pork butt was falling apart as I was removing it from the smoker.
