Doing a pork belly today on the pellet grill.

Simple marinade for 2 hours.
1 lemon juiced (or use 2 Tbs lemon juice in a bottle or squeezer)
2 Tbsp soy sauce
1 tsp salt
1.5 Tbsp chinese 5 spice
1.5 Tbsp brown sugar
2 tsp ground black pepper
(mix together all the dry)
1 can beer (add to the foil pan)
Marinade for 2 hours. covered in fridge
Score the belly (top side only)
poke the bottom side with a fork.
Rub with lemon juice both sides. Rub in soy then rub in the dry to the top. (yes you can do the bottom also)
Place pan in your grill, put rack over the pan, add the beer to pan. BBQ for 90 mins or to your liking.

I agree with your wife. It looks mighty tasty to me.

Point for sure.
