Gotta adjust it came out fall off the bone wife said concept was there maybe next time try with cover off or the meat was sliced to thin what do you guys think

ok i looked it up. it kind of the same concept as king gyros restaurants here. what seasonings do you put on it? im guessing there are variations of this also? beef pork chicken lamb goat deer?

Whatever, it still looks good!
Bet I could demolish half a dozen tacos... Oh yeah!

Could be too thin, I like 1/4 inch thick.
If not too thin, maybe over cooked.
Or if too thin cut, over marinated and it was overly tenderized.
More time uncovered could help.

Everyone has a different approach, but this is what I’ve done and how I run it.

I bank the coals to one side then occasionally rotate the spit to cook evenly, then at the end I’ll finish with some coals surrounding it.

I think it looks great! Write down what you did this time, make small adjustments until the wife approves!

I've seen them made with super thin meat, but because it's packed together tightly it cooks similar to a giant thick piece. Definitely do not give up! Experiment more!
