Pickled Ring SS /Bologna Hot&Sweet

Making a couple jars of pickled ring or ring SS i made other day.

Kinda warm for one jar and hot for other.

Make the brine, bring to boil for 3 mins. I added some onions to my brine. Let cool before adding to meat.

Layer onion then meat or whatever you like.

Recipe: In a sauce pan over medium high heat .
5 cups vinegar
1 cup sugar
1 tbsp. pickling spice
1 tsp. red pepper flakes
1 tbsp. minced garlic
1 tbsp. Jamaican Scotch Bonnet Pepper Sauce (opt) i did not add, used Crystal hot sausce and a few Trappeys peppers.
1/2 tsp. salt
1 tsp. cumin
1/4 cup of sliced onions

Bring mixture to a boil and simmer for 3 minutes cool then. pack 2 quart jars with layers of onions and bologna and pour mixture over onions and bologna. Screw on lids and turn upside down and chill in the frig for 3 days! They will last at least 6 weeks!

Cover with the brine. Put lid on and store in fridge upside down.

Ha Bear you remember those good old days.
Pickled pigs feet and hocks, pickled onions and hot sausage wow those were the days my friend.
