Love pickled brussel sprouts. Still working on finishing off the last big batch I canned but want to try smokin Al's Vacuum in the fridge process on the next batch for quicker results. I think the water bath sometimes makes them too soft for my liking and the vacuum fridge method would keep them crisper, (kinda like a deli style sprout).  If you decide to try before I can get to it (probably next fall) let me know how it works out.

Barry.

Now that the cats out of the bag. This is how I plan on pickling them. Pictures and results will be posted.

I have to say I am a fan of these, Thx for posting the recipe, We found some a couple months ago, ended up buying 2 bags of them didn't realize the second bag was Kimchi style, They were ok, not what I wanted though.

It will be interesting to see how these taste. The ones that came in my Bloody Mary were great.

I'll tweak this recipe if it's not to my liking.

Well, these turned out AWESOME!

Very good! I'm not going to water bath them. I'll keep them in the fridge. I don't think the two jars will last long. The off colored one on the right is because the jar is blue.

I'd like to add onion next go around and maybe some fennel or cardamon.

Cool, Let us know what you think on taste, I am talking to the wife about trying to make them as well.

They look good. I'll need to try these. I'll have to look around for a vacuum jar. I think I have one.
