Vegetable Beef Soup

Well Im about to break down a rib roast and I think I now know what Im doing with the ribs.

Thanks a bunch, Brian. I have a few racks in the freezer from breaking down rib roasts this past Christmas, too. Hmmm, what to do with them...🤔
 
Today was rainy and windy, but the front has moved out and tonight the temps are going to drop into the low 20s which is cold for us. What better thing to cook than soup? Digging around in a freezer this morning, I found a rack of beef back ribs that maybe I had forgotten about. Placed the vac sealed rack in a sink of water to thaw and a plan was hatched, I was going to make a pot of soup so here we go...

The main attraction for this party...

Time to make a beef stock so cut them into individual ribs and on a sheet pan into the oven at 400℉ for about an hour or so without any seasoning...

After about 30 minutes, time to flip them...

Another 30 minutes or so and they go into a pot along with any juice on the pan...

Place the sheet pan over an eye on the stove and add maybe ½ cub of water to deglaze and scrape up the goodies stuck to the pan...

All of that goes in the pot along with some carrots, celery, and onions that were also roasted along with some peppercorns and a couple of bay leaves. Cover everything with an inch or 2 of water and bring to a boil. Reduced the heat to low, cover, and allow to gently simmer for 4-5 hours...

After several hours, I removed all the ribs and the meat from them. Allowed the broth to cool some to de-fat...

Then I brought the broth back up to a boil to reduce while I got the other stuff ready.

Now it's time to make soup. Some more invitees to the party...

After adding the meat back into the pot, I added a little EVOO to the other pot and sauteed the carrots and onions for just a few minutes. While I was doing that, the potatoes needed to be peeled and I had a volunteer...

All the veggies and such into the pot along with a can of whole tomatoes I crushed. Brought to a boil, reduced heat and simmered for about 30 minutes or so. Tasted for seasoning and adjusted...
