Vegetable Beef Soup

Today was rainy and windy, but the front has moved out and tonight the temps are going to drop into the low 20s which is cold for us. What better thing to cook than soup? Digging around in a freezer this morning, I found a rack of beef back ribs that maybe I had forgotten about. Placed the vac sealed rack in a sink of water to thaw and a plan was hatched, I was going to make a pot of soup so here we go...

Time to make a beef stock so cut them into individual ribs and on a sheet pan into the oven at 400℉ for about an hour or so without any seasoning...

After about 30 minutes, time to flip them...

Another 30 minutes or so and they go into a pot along with any juice on the pan...

Place the sheet pan over an eye on the stove and add maybe ½ cub of water to deglaze and scrape up the goodies stuck to the pan...

All of that goes in the pot along with some carrots, celery, and onions that were also roasted along with some peppercorns and a couple of bay leaves. Cover everything with an inch or 2 of water and bring to a boil. Reduced the heat to low, cover, and allow to gently simmer for 4-5 hours...

After several hours, I removed all the ribs and the meat from them. Allowed the broth to cool some to de-fat...

Then I brought the broth back up to a boil to reduce while I got the other stuff ready.

Now it's time to make soup. Some more invitees to the party...

After adding the meat back into the pot, I added a little EVOO to the other pot and sauteed the carrots and onions for just a few minutes. While I was doing that, the potatoes needed to be peeled and I had a volunteer...

All the veggies and such into the pot along with a can of whole tomatoes I crushed. Brought to a boil, reduced heat and simmered for about 30 minutes or so. Tasted for seasoning and adjusted...

Wow that is pure beef soup winter money!!!! Spinner worthy!!!

Ps you have me with those roasted beef bones!

Great looking soup, and it certainly is the weather for it. Going to be that way for the rest of January if the forecast are correct. BRRRR!

Holly Cow Batman! That has got to be some kind of good! Love the pic of little girl. I made some beef Pho yesterday and forgot to put the beef in. It was so good really did not mind but guess I got to have again tonight with the beef.

Great looking soup Charles . Love the roasted beef bones . I've always wanted to start stock that way , but never have .

You two make a heck of a team Charles. That soup would certainly hit the spot right now. It's been in the teens here lately during the day and single digits at night. It's getting harder and harder for me to get my butt outside for my daily walks.

That's beautiful Charles! One of the best things about homemade soups, besides how good they are is the aroma in the house while making it!
I'm thinking you have one of the best tater peelers of any of us... have to see if I can get one of those! :emoji_blush:

Sorry for the late reply, it's life sometimes, but I really appreciate all the positive comments. The oven roasted ribs is time consuming, but a game changer. So much depth of flavor in the broth. I think I'll have a bowl for supper tonight.

Well Im about to break down a rib roast and I think I now know what Im doing with the ribs.
