Hey Peachey I am timid about adding fruit, but tis the (peach) season and just smashed some unsliceable buckboard yesterday.

We get great ones, yet some are obviously mealy or more sour. I've not yet ventured into canning- please forgive my ignorance. Is anything added? With the texture change, do you always use canned? How does fresh turn out? I have the means to pseudo pressure cook a jar if need be.

You can use fresh peaches you’ll be fine. The only thing added from canned peaches would be the sugar added when canning them ( I think sugar is added I’m not sure I’m not the canner at my house). Hopefully you enjoy them.
