Patchwork pattern on store cheese

how do I get that dark checkerboard pattern.... like you get on some store bought cheese ?

The grates are most likely made of "Expanded Metal"

they sell them at homedepot. heat hot to burn off oil. rub with your own oil and then season in smoker. Do this or it can rust,
