Local caught and processed lump crab meat went on sale so I decided to open a bottle of Sauternes that my Uncle had given to me before he passed away and cook a great meal. The crab was $20/#....so I pulled out a large snapper filet from the freezer for the meal. I had been wanting to make this sauce for a while now...decided to go ahead and do it.

Always nice when you get the locally processed fresh crab meat. I refuse to use anything else or I buy it live steam it and the wife picks it as I don't have the patience.
 
Keith, what a delicious looking meal. Nothing there I would not just enjoy to the fullest.

It’s hard to lose the ones we care for and love so much… but know you done your Uncle proud with that meal and use of his work. He was for sure smiling down on you!

Sauternes was the first wine my Uncle shared with me. It was during our big family fishing trip. I asked him what is the best way to enjoy this wine, he told me to take very small sips and let the wine evolve in the glass over time...and the flavor will change with every sip as the wine warms, oxidizes, and changes in the glass. He was right. From apricot, to buttered pecan, to glazed apples, to apricot, to honey, to cashew, to bing cherry, to hazelnut.

That memory has stuck with me for over 20 years. It was nice to relive the experience with this bottle. So if you are a supertater and have never experienced a great bottle of Premiere Cru Classe 1855 Sauternes....put that on your bucket list....

Thank you Brian. It was a really good meal. We also had a charcuterie board with Calabrian Lonzino, Lemon drop melon, fresh ripe figs, and marscapone cheese. Served that with a bottle of Italian Prosecco DOCG. Strawberries and homemade fresh whipped cream for dessert with the dessert wine.

Thanks norm. Yes, always great to have access to fresh seafood. I would go and catch my own crabs right now, but still waiting on my boat to finish being repaired.
