Crab Legs, Crab Cakes and Brazilian Moqueca Seafood Stew

I tried a new way to cook crab legs. Cut slits in the shell and saute in seasoned butter in a pan. These were really good but messy. I decided to just steam the last two.

Next some crab cakes. Made some of Keiths white remoulade sauce for them. These are those ones from Sam's and are pretty good. Full of crab meat.

I seen that Brazilian Moqueca Seafood Stew on Beat Bobby Flay and looked like something I wanted to try. I used cod, scallops and shrimp. When I started to saute veggies in that red palm oil it smelled awful! I almost pulled the plug right there but continued. The house still stinks this morning. It tasted Ok but will never make again and that red palm oil is in the trash! If I had used red curry paste this would of been great.

Looks dang good! When you say "from Sam's", are they a fresh packaging like in the meat department or packaged in the frozen department? Sadly Sam's here stopped carrying jumbo or super lump crab meat, so I had to buy from another local source...up to $30 a pound now! That's why I only make crab cakes a couple times a year. Mine have such little filler, I dont even attempt to flip them. On to a hot cast iron skillet then under the broiler with butter on top. I'd be willing to to try the Sam's Club one's of you say they are good.

I love the flavor of snow crab legs, but what a pain to eat. Here in the east, we have the Chesapeake Blue Crab. Delicious, but you can sit and pick those things all day and never get full! I did an experiment when snow crab legs were on sale for something like $7 a pound. I had already started pre-picking the legs so the wife and I could just sit down and eat the crab meat. I decided to weigh the meat and it turned out that in the end, it was about the same cost per pound as lump crab meat! And never buy them frozen. They are frozen in an ice layer and you pay for that ice per pound:emoji_wink:

All looks great Brian! I think I posted Moqueca a couple years ago. As I recall it was tasty.

Hey, I got a chance to drive below the Dam last week and I've talked to some friends as well and it appears they are just doing a bit of clean up and possibly upgrading that area on the North side of the river. I bet we gain access back in the near future. The day I was there they were working on rip-rap improvements near the flood gates. That place stinks this time of year and especially when they don't release on a regular basis.

Loots of tasty lates Brian. There was a “Joes Crab Shack” in the big city next to us that did their crab legs similar. They would dip them in a butter sauce, dust with spices then over the grill to sear them……they were tasty!!!

However that stew looks top shelf!!!

Thanks. They are the Member Mark frozen. For bought they are pretty good.

Thanks Charles. Sometimes thing dont work out but I have 4 rainbow trout in the smoker that will make up for it!
 
I bought it just to make Moqueca a couple years ago. I didn't care for the oil either.
I think it went bad but had a 2027 date. I will never forget that smell. I should of switch gears and went with Red curry paste when i smelled it!
