I'm not a huge fan of cold rice either. Sushi rice should be room temp. Any sushi I buy pre-made, I always let sit out of the fridge to come closer to room temp before eating. That includes sashimi (just the raw fish). The fish or meat has a much better flavor too when it's not at fridge temp.
Usually has imitation "Krab" meat in my experience. I have seen plenty of veggie only rolls called by different names though.
