Went offshore fishing Saturday with friends. We had a good trip, but the sharks were bad. They stole a lot of our limit...very frustrating. But still had meat to take home. I kept all the sea trout because no one else wanted to fool with them (gotta eat them very fast...within 3-4 days of catching them). So Monday night was dinner night with friends. No pics. of the process this time, but we did have Calabrian Sopressata, Pistachio and Lemon Salami, and Parmesan Cheese on the board for an appetizer.

The catch for the day (see that big snapper with a bite taken out of him? Did I ever tell you guys I hate sharks while I'm offshore fishing?)

One of the shrooms.....this is a C. Lewisii subspecies of chanterelle mushroom. more yellowish with brown speckled on top. And a little smaller than the common Chanterelle. Just as tasty, and more floral scent. I like them all.

We had a nice French White wine I am not familiar with. It was similar to a Chardonnay though, very good bottle that went well with the meal...

Good food. That beurre blanc is just a standard buerre blanc with home grown tomato and basil added. Man it was a winner with the fish! And the lemon peel in the olive oil to extract the lemon oil prior to frying-that is a great trick for flavor infusion in the fish.
 
Wow what a feast and talk about combat fishing! Just crazy!
 
Keith, your trout looks great, nice plate of food.

That is just wild about the Sharks, they are getting a lot more plentyfull up this way also as the water is getting warmer for a longer time each year.

Thanks civil! This is the worst trip yet for sharks. And you are right, it is combat fishing. And reeling a fish up from 200-300 ft. will wear you out! But you gotta burn through the pain because it's the last 20-40 ft. when the shark will grab the fish once the blastotrauma immobilizes the fish.

Like they say any day fishing is a good day. Plate looks delicious.

Thank you David. IMO, they need to loosen up the regs. to allow more sharks to be taken.

Wow, that looks great! Fish, shrooms, wine! Never had sharks eat my catch, had a barracuda do it once in Mexico. Been way too long since I went fishing 🙁

I grew up in Corpus Christi up until Jr High school. We called Sea Trout "Specs" and they were delicious. Moving to Wyoming introduced me to more local species, in local "fresh" waters.

Years later, salmon and steelhead trout were available in local markets and I take full advantage of those.

Yes, we have specs here as well, and they are tasty too, but they actually have spots on them. What I caught look almost exactly the same, but the fins are more yellow and they have no spots. You might remember them as white trout which is the local name for the fish. They have an enzyme in the flesh that will start breaking down the flesh once they are on ice and die. Only good for eating very fresh...within 3-4 days of catching them, and you gotta eat them the day you clean them. If someone found a way to deactivate that enzyme, it would be great because then you could freeze the filets. And White trout are really abundant because nobody targets them...except maybe for a meal that night, or bait that day.

Thank you Chris! Sharks suck when you are offshore fishing. Not only do they steal your fish, they wear you out fighting them to get your tackle back....and they waste time.

Looks amazing as usual! I'd be pissed at those sharks too!

Thanks Waterrat! I've had cudas steal fish too. My brother caught one over 6' long one day. We did not keep it. Sharks are a much bigger problem here though.

That is very interesting. I do seem to recall the term white trout, which were usually smaller than speckled trout. We mostly fished from shore and maybe were targeting speckled trout.
