Went offshore fishing Saturday with friends. We had a good trip, but the sharks were bad. They stole a lot of our limit...very frustrating. But still had meat to take home. I kept all the sea trout because no one else wanted to fool with them (gotta eat them very fast...within 3-4 days of catching them). So Monday night was dinner night with friends. No pics. of the process this time, but we did have Calabrian Sopressata, Pistachio and Lemon Salami, and Parmesan Cheese on the board for an appetizer.

The catch for the day (see that big snapper with a bite taken out of him? Did I ever tell you guys I hate sharks while I'm offshore fishing?)

One of the shrooms.....this is a C. Lewisii subspecies of chanterelle mushroom. more yellowish with brown speckled on top. And a little smaller than the common Chanterelle. Just as tasty, and more floral scent. I like them all.

We had a nice French White wine I am not familiar with. It was similar to a Chardonnay though, very good bottle that went well with the meal...

Good food. That beurre blanc is just a standard buerre blanc with home grown tomato and basil added. Man it was a winner with the fish! And the lemon peel in the olive oil to extract the lemon oil prior to frying-that is a great trick for flavor infusion in the fish.
 
Wow what a feast and talk about combat fishing! Just crazy!
 
Keith, your trout looks great, nice plate of food.

That is just wild about the Sharks, they are getting a lot more plentyfull up this way also as the water is getting warmer for a longer time each year.
