I could eat a whole Yellowfin tuna loin raw, but once it hits the grill, for me, it has to be cooked through. I'm not sure why, it's just how I like it.

So, st one point our neighbor at the camp in Venice, La. was a charter Captain; a well known charter Captain....sometimes, he'd have clients fly in from California, or all over the world really. They would catch a bunch of fish and leave...take a few pounds home-whatever would fit in a carry on ice chest, and leave the rest. We'd be down there fishing and get a knock on the door...."hey-yall want some tuna? (or wahoo....or snapper....or whatever.) Clients flew in, caught fish for 3 days, did not take any home. I have 300# of fish I am giving away." I would always reply- "Hell yes, we will take some off your hands!" He always saved the bellies for sashimi. OMG! I ate so much I hurt myself, but it ruined me on eating it any other way. I just can't order it in a restaurant and enjoy it. NOTHING beats fresh sashimi. Something about the fish changes when it is frozen for transport. So yeah-I get it.....
