Fresh snapper from my July 3rd fishing trip. Had to cook some....DUH! LOL! So Wednesday night I had dinner with my Aunt. First up, the board. Coppardo with figs, Parmesan cheese, Sopressa di Veneto...
Pulled out a bottle of 2004 boudeaux (Pouillac Grand Cru) to go with the board and to sip while cooking no pics. but it was excellent!
Caprese Salad:
We used Burrata ( @civilsmoker ) ...
Look at those fresh ripe tomato slices!!
The Salad...
Now the fish. First simmer lemon peel slices in the olive oil to extract the lemon oil into the olive oil. Use the peel from one whole lemon.
Next, make the homemade Hollandaise Sauce...
Now fry the fish...
The Plate:
Dessert was the white wine left in the bottle with fresh cut Lemon drop melon. Oh my was that good!
