My wife brought home a package of Italian sausages and asked me if I could smoke them. I said, I don't know, but I know where to ask. Any suggestions about whether or not this is a good idea, and if so, what temp they should be smoked and when they should be pulled would be greatly appreciated.  Thanks in advance!
 
Sure, you can smoke them.  You want to keep them around 225°/250° or so until they get to at least 150° internal, 155°/160° would be better.   Adds a wonderful smokey flavor to your spaghetti sauce or have on a bun with fried onions and peppers, or great with scrambled eggs and hot sauce!  (or in my case knawing on them by themselves cuz i'm too impatient to wait to cook anything else.. lol!)
 
We do them all the time. Excellent on a bun with peppers & onions.
 
I just did some last week end. Put it on the cheap walmart special wanna be grill with Briquetts and damp sawdest. Tast great.

Just Grill them like any other hot dog.

You can smoke them.  You can grill them.  Just don't cold smoke them.
