LEM Package Sausage Mix - Measurements

When the SMF/LEM 20% discount was going I purchased four boxes of LEM packaged sausage mix to try them out.

I had also bought a ham mix and it turned out way to salty. Ended up soaking the ham slices in water to make it edible.

So I am reticent to mix up an entire package of the mix, which it says is for a 5 pound batch of sausage. So I decided to mix up a 1 pound batch of the breakfast sausage and a 1 pound batch of the sweet Italian sausage.

I'm not certain if anyone else has noticed the amounts called for on the back of the package for mixing less than 5 pounds of meat, but the math doesn't add up.

Both packages say on the front that they make a 5 pound batch of sausage, and, both say they are the same weight, 47 gm.

I would expect the amount called for 1 pound of sausage to be the same. The breakfast sausage calls for 1 tablespoon per pound of meat and the sweet Italian sausage call for 2 teaspoons.

I decided to open the packages and weigh the contents. The breakfast sausage was 44 gm and the sweet Italian sausage was 47 gm. This suggests I should be using 1/5 of that for 1 pound of sausage, or about 9 gm.

I weighed out a level tablespoon and it weighed 15 gm. This would put 2 teaspoons at 7.5 gm.

Are these folks just off on their math or am I?

Right . It's not based on your TBL . The physical measures are all different . Mine will be different than yours .
I always divide the package weight by the batch size advertised , and go with that . 9 grams per pound is a common amount I see on pre packaged seasonings .

I will use physical measure for spice , but not for salt in sausage .
 
This would put 2 teaspoons at 7.5 gm.
Not being a jerk , but 1 TBL is 3 tsp .
Divide out the weight by batch size , weigh that amount and mix up a pound and do a fry test and see what you think .

Doing the math, 9g per pound is very close for either package. It’s a good place to start with a fry test and go from there.
