Overnight Boston Butt

Hello - I recently picked up a used Smokin It #2 and have been working to learn the smoker and get results that I am happy with. I got a 10# Boston Butt along with a ThermoPro wireless thermometer for an overnight smoke that turned out really well. I have a Gravity 980 that has been a great smoker for me but the #2 was such a deal that I had to add it to the family.

Thank you! I recently joined Costco and saw that they always have pork belly available. I’d like to try that but would probably lean towards using the 980.
