We leave for Texas this weekend, so going to have to load up the last remaining smoker. Have some folks coming to help load the moving container, so decided to do one last smoke to feed the crew of helpers. Got some chicken thighs and drummies, shotgun shells, and mac & cheese going, once done, the smoker gets cleaned up and loaded.

It's bittersweet...looking forward to the move but our PODS won't be delivered for two weeks after we move in. I may be compelled to buy a new smoker to "get me through" 😆

I do a 50/50 blend of ground pork and 80/20 ground beef mixed with some shredded pepperjack, diced chiles, some of our Baba Yaga rub, and some bbq sauce (typically use Meat Mitch Womp Sauce), then put in into a ziplock and pipe it into the manicotti, wrap with bacon, and into the fridge overnight to soften the pasta a tad. Smoke at 275° the next day until the bacon is crispy, then I glaze with Blues Hog Raspberry Chipotle BBQ sauce and let them go another 5 mins for it to tack up.
